Ya know, I’m really not a fan of mac and cheese.
Said no one, ever.
Everyone loves mac and cheese. End of story. The only problem? There are approximately 38 million mac and cheese recipes out there, each claiming to be the best, creamiest, most deliciously scrumptious you can make. And then you make them. You buy 7 kinds of cheese, slave over a roux and wait for hours while the cheesy sauce bubbles away in the oven only to shovel that first bite into your mouth and be overwhelmed with…”meh”.
Ok, so maybe that’s an exaggeration. You probably only bought 3 kinds of cheese. And a roux isn’t that hard. And you probably only baked it for 45 minutes. But when you have noodles, butter, milk and cheese in one glorious dish the result should never (never, I say!) be anything less than spectacular.
Grandma to the rescue.
Her recipe really is the creamiest, most deliciously scrumptious you can make (and you only have to buy 1 kind of cheese, yay)! I’ve already told you that my Grandma was a food genius and now I’m going to prove it with her 5 ingredient mac n cheese.
Here’s what you’re gonna need:
1 cup uncooked macaroni (will equal 2 cups cooked)
1 tablespoon flour
1 tablespoon butter
1 cup milk
2 cups grated sharp cheddar cheese (Separated into 1 cup, ½ cup and ½ cup)
And of course, a super yummy something to sip on. Tonight, I had a lemon La Croix.
Here’s what you’re gonna do:
First of all preheat the oven to 350 degrees and cook macaroni according to directions (remember to salt that water). While the macaroni is cooking, melt butter over low heat in a heavy saucepan.
Combine cheese sauce and macaroni in a buttered casserole dish. Take a sip of that yummy drink.
Stir ½ cup cheese into the macaroni and cheese sauce mixture. Top with the remaining ½ cup cheese and cover.
Bake for 20 minutes and uncover. Bake uncovered for 10 more minutes or until bubbly and golden on top.
