The recipe I created this month was inspired by one of my all time favorite treats- chocolate covered cherries.
But ya know what?
I almost never eat chocolate covered cherries.
And do you know why?
Because they are a bloody mess.
And when you try to avoid the inevitable explosion of sticky, sugary goodness by eating them in one bite you end up looking like a chipmunk with red goo dripping from its mouth.
Which is why I came up with these delectable substitutes that have all the goodness of a chocolate covered cherry but none of the mess.
Here’s what you’re gonna need:
1 box red velvet cake mix 1 can cherry soda 12 ounces of maraschino cherries, including syrup (2 small jars) 12 ounce bag of semi-sweet chocolate chips Here’s what you’re gonna do: Pre heat your oven to 350 degrees. Combine the cake mix with the soda and stir until smooth.
Bake cake mix according to box directions and let cool.
Once the cake has fully cooled, crumble it into a mixing bowl.
Place the cherries and syrup in a blender and pulse until smooth. Add the cherry puree to the cake crumbles and mix evenly. Roll the cake/cherry mixture into bite size balls and place on a silicon mat (or wax paper).
Melt the chocolate chips SLOWLY in the microwave or in a double boiler. Dip each cake ball in the chocolate until completely covered and top with grated chocolate.
Once all the balls are complete, place in the fridge for about 5 minutes for the chocolate to harden.
All that’s left is to enjoy a delicious, moist, no mess chocolate covered cherry (or three)!
