Over the last few weeks I’ve had the pleasure of participating in The Food Blogger Love Cookie Exchange hosted by The PinterTest Kitchen, which allows food bloggers from all over to come together to share cookies and recipes with each other.
Here’s how it works: Eligible food bloggers sign up. Receive the addresses of three other food bloggers. Send each of them one dozen delicious homemade cookies. Receive three different boxes of scrumptious cookies from other bloggers. Devour said scrumptious cookies. Post cookie recipe on blog. See everyone else’s cookie recipes. Salivate. Make all of the cookies.

These are super simple (of course) and super delicious, plus there is something about oatmeal cookies (and chocolate) that is super comforting and cozy this time of year!
Here’s what you’re gonna need:
3 cups quick cook oats
1 cup chocolate chips
1 cup dried cherries
1 tablespoon coffee (or vanilla if you prefer)
1 cup shortening
1 cup brown sugar
1 cup flour
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon salt
Here’s what you’re gonna do:
Pre heat oven to 350 degrees. Cream together the shortening, sugar and brown sugar until light and crumbly.
Add coffee and eggs, one at a time and beat until smooth.
Sift together the flour, cocoa powder, baking soda and salt. Gradually add to the wet mixture until all combined.
Stir in the oatmeal, chocolate chips and dried cherries.
Roll into 1 inch balls and place on a greased cookie sheet. I like using a melon baller or cookie scoop so all cookies are the same size and shape, but it isn’t a deal breaker if you don’t have one.
Bake for 10-12 minutes, until the cookies are puffed and just a tad bit crispy around the edges, but still soft and chewy.
Let cool and serve with a glass of milk!
