Last week we made easy Mexican meatballs and boy were they delicious. Especially because I got to sip on this lovely concoction while I cooked.
Is your mouth watering yet? Cause mine is.
Now, if you are new to my little piece of internet then you don’t know that I always cook with a drink. It doesn’t have to have alcohol, but it does have to be pretty.
Why you ask?
Well, when I first moved out on my own, my mom and I decided that at least once a week we would get together, cook a meal and catch up. As normally happens when 2 ladies share a kitchen, that meal was (and still is) frequently chopped, stirred, and simmered over a glass of wine…and occasionally a little gossip.
It was over these weekly ladies nights that I discovered the difference between cooking for enjoyment, and cooking to make the 7 kids running around your ankles stop complaining about being hungry. So often we make cooking a necessary evil by adding it to our chore list instead of using it to de-stress after a long day (smashed garlic lately!?) or express creativity.
I’ve found that the easiest way to get in the “this is fun, not something to cross off my list” mindset is to pour some sparkling water (or if you prefer, something a little stronger) into a fancy glass and add a lime wedge. There’s just something about a fancy drink that makes everything more relaxed. It may seem silly at first, but I promise it works! And what better drink to try it out with than this spicy jalapeno & citrus margarita!
Here’s what you’re gonna need:
(Recipe makes 2 margaritas)
1/2 cup water
1/2 cup sugar
Juice from 4 limes
Juice from 1 orange
Zest strips from 1 orange
Zest strips from 1 lime
2 jalapenos, sliced (I like spicy, so I left the seeds and ribs in, but if you want it a little milder just remove those)
4 ounces of tequila (not shown)
Here’s what you’re gonna do:
Combine 1/2 of the sliced jalapenos, citrus zest, sugar and water in a pot over medium heat.
Stir until sugar has dissolved and remove from heat.
Let cool to room temperature and strain simple syrup to remove jalapenos and citrus zest.
Next, combine 2 ounces simple syrup, 4 ounces tequila and all of the citrus juice in a shaker and shake, shake, shake.
Fill 2 glasses with crushed ice and pour shaken margarita over each.
Garnish with lime or jalapeno and enjoy!
You can store the simple syrup in the fridge for up to a week…or until you fee like another marg. 🙂
