As you may have noticed, I’ve been going through past KISS recipes and giving them a bit of a face lift the last few weeks.
This is partly because when I first started this here blog I had absolutely no idea what I was doing (now I only kind of know what I’m doing) and partly because it gives me an excuse to cook (*cough* eat) loads of delicious food all over again…which convieniently is one of my New Years resolutions.
Win. Win. Win.
So please re-enjoy this painless one pot pasta and be on the lookout for more revisited favorites!
As evident to everyone with a Facebook account, the last few days have been pretty darn cold for us here in the south. And when the temperature drops there is nothing I crave more than a warm, creamy bowl of pasta.
Plus, this recipe was perfect for “Snow Scare 2014” because it only calls for 4 basic ingredients that you probably already have in your pantry. No rushing to the grocery store for bread and peanut butter for you!
Before we get started I want to warn you that while incredibly easy, this recipe does need to be given a quick stir every 2-3 minutes, so unless you enjoy cleaning up burnt milk explosions I would keep an eye on the stove until this one pot wonder is off the heat.
Here’s what you’re gonna need:
1 (15 ounce) can diced tomatoes
1 cup uncooked pasta
1 cup milk (I would recommend using 2% or whole milk, low fat tends to “break”)
2 tablespoons pesto
salt to taste
Here’s what you’re gonna do:
Combine tomatoes, pasta, milk, pesto and a pinch of salt in a pot over medium heat and stir, stir, stir.
Once you’ve been stirring for about 20 minutes you’re gonna see this deliciousness.
Totally worth it right?
Yeah, I thought so.
All that’s left is to top with basil and grated parmesan cheese and you have yourself one delish meal.
Hint: if you want to impress Mr. Right for Valentines day, double this recipe and top with some seared scallops or meatballs. It’s husband approved. 🙂
