Happy Friday, Sweetie!
So, for those of you who don’t check pinterest daily this might be a bit of a shock….but its almost July 4th!!!! Yay!
And if you haven’t planned out an entire meal consisting of ONLY red white and blue then shame on you! Luckily I have the perfect side dish to get you started (and you can find everything else you need for your color coded meal here).
Not to toot my own horn, but this is pretty much the perfect salad for a summer meal. Not only is it fast, easy and delicious (duh) but it can be made a few hours ahead and refrigerated until ready to serve. Because all I want to worry about on a holiday weekend are tan lines and how long until I have to refill my drink.
Isn’t it beautiful?
Like I said, perfect.
Here’s what you’re gonna need:
1 pound fresh strawberries, cut into quarters
6 ounces of fresh blackberries
18 ounces of fresh blueberries
8 ounces “cherry sized” fresh mozzarella balls, cut in half
1/2 cup of fresh basil, julienne
2 tablespoons white balsamic vinegar
pinch of salt
Here’s what you’re gonna do:
Combine all ingredients in a bowl and mix until well combined and all of the fruit is coated with the vinegar.
Serve in a pretty bowl.
Whew, that was pretty tough. 😉
