You know what’s awesome about brunch?
Well, yes… but for me the MOST awesome thing about brunch is enjoying the best that breakfast has to offer AND the best of lunch in one giant, fabulously delicious, super meal.
There’s just something about eating French Toast and Eggs Benedict in the afternoon that makes even them, the most fabulous of all breakfast food, taste so much better.
Maybe it’s that slept until noon, lazy day feeling that brunch evokes…or it could be the champagne.
Either way, this super simple quiche draws its inspiration from the happy marriage of lunch and breakfast by combining the flavors of a classic BLT sandwich, with breakfast’s finest, the egg.
So grab a few girlfriends, a big ol’ cup of coffee and let’s get brunchin!
Here’s what you’re gonna need:
1 basic pie crust
1 1/2 cups milk
1 cup of chopped spinach
1/2 cup chopped tomato
2 chopped shallots
4 slices of bacon, chopped
1/2 teaspoon of salt
And if you are looking for a unique alternative to mimosas try filling a champagne glass half full of your favorite white wine then topping it off with peach La Croix. It’s bubbly, yummy and perfectly light.
Here’s what you’re gonna do:
Preheat oven to 325. Cook the bacon until crispy. Move the cooked bacon from the pan to a paper towel.
Add chopped shallots and sauté for 2-3 minutes.
Add the chopped spinach and sauté until wilted.
Remove from heat and combine the bacon, shallots, spinach and tomatoes.
Add the eggs, milk and salt and pour into the pie crust.
Bake for 60 minutes or until quiche has puffed and a knife inserted into the center comes out clean.
