It’s no secret that I like tacos.
And it’s no secret that I like spicy, homemade salsa to go on those tacos.
When I first started this here blog I shared my “super secret salsa equation” showing you how to make salsa with just about any fruit or veggie and I stand by it….
But there are some days I want fresh salsa and I want it now.
This is the salsa I make on those days. The rotel cuts chopping time in half
Here’s what you’re gonna need:
1 can rotel
Half of 1 small onion
Zest from 1 lime (or to taste)
1/2 cup chopped cilantro (or to taste)
Salt and pepper to taste
Here’s what you’re gonna do:
Drain the rotel.
Cut tomatoes in half and scoop out the seeds as best you can- doesn’t have to be perfect, but the better you scoop the less liquid you have to worry about.
Chop the tomatoes and add to the colander with the rotel to allow both to drain.
Meanwhile, chop the onion and zest the lime.
Combine the onion, lime zest and cilantro in a bowl and add the rotel and tomato.
Add salt and pepper to taste. Stir and serve.
Serve with tacos or chips!
