I really like roasting peppers. Yes, they taste delicious…but more importantly they are one of the only foods that you required to burn. They are literally impossible to mess up, which is what makes this dip so incredibly easy.
Plus, its incredibly versatile. It’s great on tacos, burgers, and the perfect dip for veggies…or chips 😉
Here’s what you’re gonna need:
1 bag of mini sweet peppers
1 small onion
1- 6 ounce container plain greek yogurt
1 tablespoon siracha
1/4 cup cilantro
Here’s what you’re gonna do:
Heat your grill to high and place whole peppers and sliced onion rings directly on the grates.
Close the grill and let the peppers cook for about 5 minutes or until black (yes, black) on one side.
Flip the peppers and remove the onion rings from the grill.
Let the peppers cook another 5ish minutes until they are black all over. Place the blackened peppers in a bowl and top with a plate to let them steam for another 5-10 minutes. The steam will allow the skins to peel off quickly and easily so don’t skip this part.
Once the peppers have steamed and cooled a bit chop off the stems and rub the skin with a paper towel to remove the burnt skin.
Throw the grilled onions, de-skinned peppers, yogurt, siracha, juice of the lime and a pinch of salt into a food processor and blend until smooth.
Add the cilantro and pulse a few times to incorporate.
Serve with chips, corn tortillas or veggies.
