I hope you had a wonderful week and have a super fun weekend planned! And luckily for you, I have the perfect Friday night meal to share with you today.
As some of you may know, once a month a group of bloggy friends and I get together and share recipes celebrating one of the many national food holidays for a Foodie Extravaganza and next month our theme is fresh peaches.
I know, I can’t wait either.
Which is why I decided to go ahead and share this perfect peachy pizza with you today. There’s just too much peachy goodness to keep it to one month!
Besides the combination of the sweet peaches and salty prosciutto, one of my favorite things about this pizza is how versatile it is. You can serve it with a salad as a meal or cut it into small, bites size pieces and it makes a perfect (and easy) appetizer!
Very sophisticated with very little effort. Who wouldn’t want that?!
See those little globbies that don’t look quite as melted as the rest of the cheese? That’s goat cheese (told ya it was sophisticated ;)) and that’s what really puts this pizza over the flavor edge. But don’t worry, if you or your family aren’t fans of goat cheese this pizza tastes (almost) as good with just the fresh mozzarella.
But enough chattin, lets get cookin.
Here’s what you’re gonna need:
Pizza Dough (store bought is fine, or learn how to easily make your own here)
2 green onions
Fresh mozzarella cheese
3-4 slices prosciutto (not shown)
1 tablespoon butter
1 tablespoon flour
1 clove garlic
About 3/4 cup milk
Here’s what you’re gonna do:
Pre heat your oven and pizza stone to 450 degrees (or learn how to grill your pizza without a pizza stone here).
Melt the butter over low heat and add the flour. Stir until the flour is cooked, about 2-3 minutes
Add the garlic, a pinch of salt and milk, stir with a whisk until smooth.
Let the white sauce simmer 5-10 minutes on low, stirring occasionally, until thick.
Meanwhile, roll your dough to desired thickness.
Transfer your dough to the heated pizza stone and cook for 3-4 minutes, until slightly golden.
Evenly spread the white sauce over the pizza.
Thinly slice the mozzarella and tear over the pizza. Sprinkle the goat cheese, prosciutto ribbons and thinly sliced peaches on top and bake for 5-10 minutes. Be sure to keep an eye on it as it can burn pretty quickly, 450 degrees is one hot oven!
Remove from the oven when the cheese is melted and the crust is nice and crunchy!
Top with the sliced onions and serve!
