If this is your first time joining us, the Foodie Extravaganza is a monthly party hosted by bloggers who love food! Each month we incorporate one main ingredient into recipes to share with you and this month that ingredient is one of my favorite summertime treats…PEACHES!
A few weeks ago I told you about our upcoming peachy party when I shared this oh-so-delicious Peach & Prosciutto White Pizza and this appetizer was inspired by a lot of the same flavor combinations.
I don’t know if I just have cured meat on the brain because of Bacon Month, but if you ask me there are no 2 things more delicious together than prosciutto and peaches (they are even fun to say together)!
So you wanna get started?! Me too!
Here’s what you’re gonna need:
Thin sliced French bread
2 tablespoons water
1 teaspoon corn starch
1/2 cup sugar
About 1 cup of blue cheese
4-5 slices of prosciutto, cut into ribbons
green onions, for garnish
Here’s what you’re gonna do:
Peel and chop your peaches and add them, along with the sugar to a pan over medium heat.
Stir and let simmer for 5-10 minutes. While the peaches are cooking, toast your bread slices in a 350 degree oven for 3-4 minutes, or until just barley brown around the edges (they will be going back in the oven in a bit so don’t toast too much).
Once toasted, top each slice with a spoonful of blue cheese.
Top the blue cheese with 2-3 ribbons of prosciutto and put back in a 350 degree oven for another 5 minutes. Keep an eye on them so they don’t burn!
When the peaches are soft and cooked down, combine the cornstarch and water in a bowl or cup and stir into the peaches.
Cook and stir for another minute or two. Transfer the peaches to a blender and let cool.
Once the peaches have cooled for a few minutes puree and set aside.
Transfer the warmed bruschetta to your serving dish.
Drizzle a generous amount of peach puree over the toast and top with sliced green onions.
Serve and enjoy!
