Here’s what you’re gonna need:
1.5 cups uncooked super grains (or plain quinoa)
1 container grape tomatoes
1 cup frozen corn, thawed
Juice of 2 limes
1 small red onion
1 clove garlic
2 cups chopped cilantro
2 tablespoons taco seasoning
salt and pepper to taste
sour cream (for serving)
Here’s what you’re gonna do:
The first step whenever working with grains, is to rinse them thoroughly. The OXO Rice and Grains Washing Colander makes it super easy!
Cook the grains according to their package- I use my rice cooker and it always works like a dream! Before cooking, add 2 tablespoons taco seasoning to the water, this will ensure well seasoned grains!
While your grains cook, get the veggies ready by draining any liquid from the corn and slice the grape tomatoes and red onion.
The OXO Grape and Tomato Cutter makes chopping grape tomatoes (a task I used to dread) crazy fast.
Like, all of these were chopped in about a minute, fast.
And I’m not gonna lie to you…its super fun to use. 🙂
You know what else is super fun to use?
I am loving my OXO Adjustable Hand-Held Mandoline Slicer, especially because it doesn’t take up much space in my already, chock full kitchen!
Heat a non-stick skillet over high heat and wait until its nice and hot…then add the veggies and sprinkle with salt.
Now that you’ve added the veggies, lower to medium high heat and leave em alone. That’s right. Wait about 5 minutes, until the bottom of the veggies gets some nice color and stir, only enough to keep it from sticking. Once your veggies look like the below you are good to go and can remove them from the heat.
You shouldn’t need to stir more than once, any more than that and you wont get the nice char that adds great flavor to this dish!

While you aren’t touching the veggies in the previous step…you can make our sauce.
In a blender, combine 1 cup cilantro, lime juice, seeded and chopped jalapeno and a pinch of salt.
Pulse until smooth- if it needs a little help add some water a tablespoon at a time until it is a liquid consistency.
Once the grains are done cooking, add them to a bowl with veggies and remaining cup of cilantro.
Stir and drizzle with cilantro sauce, tossing until all of the grains and veggies are coated.
Serve in a bowl with sour cream. YUM!
