I love dessert.
Especially light, fluffy, and easy dessert.
But one thing I love even more, is taking a light, fluffy, and easy dessert recipe and switching it up.
Over. And over. And over.
A few weeks ago I shared a resolution friendly key lime “pie” and one of the best things about it (besides how light, fluffy, and delicious it is) is how versatile it can be. All you need is a container of greek yogurt (pick a flavor, any flavor), some whipped cream, a “crust”, and a little creativity and you’ll have infinite desserts just waiting to be discovered….and eaten.
Today we’re going to make a no fuss tiramisu using the same basic ingredients as our key lime “pie” by switching lime and graham crackers for coffee and lady fingers.
Oh, and did I mention that it’s just as “resolution friendly” as our pie?
I know. I love you too.
Here’s what you’re gonna need:
(Makes 1 serving)
1 container coffee flavored greek yogurt
1/2 cup whipped cream (I make my own, unsweetened whipped cream for this recipe but store bought is a-okay as well)
3-4 lady fingers
1/4 cup espresso
1 tablespoon sugar
1 tablespoon vanilla extract
Here’s what you’re gonna do:
Combine the espresso, vanilla and sugar. Pour onto a plate for dipping.
Combine the yogurt and whipped cream.
Dip the lady fingers into the espresso mixture for 5-10 second (you want them to absorb the mixture but not be too soggy).
Tear the lady fingers in half or thirds and place half of them in the bottom of a wine glass. Top with half of the yogurt mixture. Add the rest of the lady fingers and then top with remaining yogurt mixture.
Top with grated dark chocolate and refrigerate for up to a day or serve immediately.
All that’s left is to dig in and enjoy your dessert…and start brainstorming the next one!
