5 ingredient lemon cake balls
Keep it Simple, Sweetie:
  • 1 box pound cake mix
  • 1 can of Lemon La Croix
  • 1 cup powdered sugar
  • Zest of 2 lemons, juice of 1 lemon
  • 6-7 squares of white candy coating
  1. Combine the pound cake mix with the can of La Croix and stir.
  2. Zest one lemon into the cake mix.
  3. Bake cake mix according to box directions and let cool.
  4. While the cake cooks, stir the zest and juice of one of the lemons into the confectioners sugar to create a thick "glaze".
  5. Once the cake has fully cooled, crumble it into a mixing bowl.
  6. Add the glaze a spoonful at a time to the crumbled cake until "damp". You want the cake mix to clump easily together but not be too wet.
  7. Roll the cake/glaze mixture into bite size balls and place on a silicon mat (or wax paper).
  8. Melt the candy coating SLOWLY in the microwave or in a double boiler.
  9. Dip each cake ball in the melted candy until completely covered.
  10. Place the covered cake balls on a silicon mat and zest the rest of the lemon on top.
  11. Once all the balls are complete place in the fridge for about 5 minutes for the candy coating to harden.
