sweet potato and goat cheese salad
Keep it Simple, Sweetie:
  • 1 container mixed greens
  • 4 ounce goat cheese
  • 6 pieces bacon
  • 1 sweet potato
  • Italian dressing
  1. Preheat your oven to 350 degrees.
  2. Cut the bacon into 1 inch pieces and cook until crispy.
  3. Set aside 1 tablespoon of the rendered bacon fat and allow the cooked bacon to cool on a paper towel to absorb excess fat.
  4. Cut the sweet potato into 1 inch chunks, coat with the rendered bacon fat and season with salt and pepper.
  5. Roast for 30 minutes, until the chunks are cooked through and golden brown. Allow to cool.
  6. The sweet potato and bacon can be prepared a day ahead and kept in the refrigerator until serving.
  7. When ready to serve, add the mixed greens, bacon pieces, sweet potato and crumbled goat cheese in a bowl and toss to combine.
  8. Either add dressing to your liking and toss to coat or serve dressing on the side.
  9. Serve and enjoy!
