5 ingredient greek summer salad
Keep it Simple, Sweetie:
  • 1 cucumber
  • 1 container grape (or cherry) tomatoes
  • ½ red onion (or 1 whole shallot)
  • 1 container feta cheese
  • ½ to 1 cup greek vinaigrette
  • salt and pepper to taste
  1. Cut the ends off of the cuc and slice in half.
  2. Using a spoon, scrape out the seeds.
  3. Once "de-seeded" you will have what look like 2 cucumber boats, from here simply slice into thin pieces.
  4. Next, cup the grapes in half and soak the thinly sliced red onion in water for about 10 minutes, this will pull some of the acidity from the onion, making it milder (I always soak red onion before serving it raw).
  5. Drain the onion, and combine with the cucumber, tomato feta cheese and about ½ cup greek dressing.
  6. Toss until coated and serve!
