Quick Bruschetta Cups
 
 
Keep it Simple, Sweetie:
Ingredients
  • 1 can diced “Italian flavored”tomatoes (if you can’t find them, regular diced tomatoes mixed with Italian seasoning and garlic work just as well!)
  • Pre baked Fillo cups (found in the freezer section), thawed
  • Small, fresh mozzarella balls
  • Fresh basil leaves
Instructions
  1. Drain the canned tomatoes, we don’t want soggy cups!
  2. Remove the (thawed) Fillo cups from the box, but keep them in their plastic container, and add a full basil leaf to each one- like a little basil liner!
  3. This is what keeps the fillo cups from getting soggy, so be sure not to skip it!
  4. Drain the mozzarella balls, sprinkle them with salt and set aside in a tea towel or paper towel to absorb any moisture.
  5. Add a few diced tomatoes to each cup, on top of the basil.
  6. Cut each mozzarella ball in half and place on top of the diced tomatoes.
  7. Top with freshly cracked pepper, a sprinkle of salt and a drizzle of olive oil.
  8. These keep just fine in the fridge for about an hour thanks to the basil leaf “shield” between the Fillo cups and the tomatoes, but I wouldn’t make them much earlier than that.
  9. Nothing left to do but serve and enjoy!
