super simple baked ricotta
Keep it Simple, Sweetie:
  • 1 (15 oz) container ricotta cheese
  • 2 tablespoons pesto
  • Salt and pepper to taste
  • Freshly grated Parmesan (optional)
  1. Preheat the oven to 425 degrees.
  2. Allow the ricotta to drain over a colander lined with paper towels for about 10 minutes. I typically change the paper towels once to make sure I get all the moisture.
  3. Combine the ricotta, pesto, salt and pepper in a bowl.
  4. Grease a shallow dish and add ricotta mixture. Be sure it is somewhat thin, you want the brown crispies on as much of the cheese as possible and too thick of a layer can make it watery at the bottom.
  5. If you have it and really want to kick this recipe up a notch, go ahead and grate some fresh Parmesan cheese on top.
  6. Bake for 5-10 minutes or until the top is golden brown and the cheese is heated through. This varies a lot by oven, so just keep an eye on it and you should be fine.
  7. Serve with toasted bread or crackers!
