double chocolate brownie cookies
Keep it Simple, Sweetie:
  • 2 cups semi sweet chocolate chips
  • 1.5 cups packed brown sugar
  • 1.5 cups flour
  • ¾ cup butter, room temperature
  • 1 tablespoon coffee or espresso
  • ⅓ cup unsweetened baking cocoa
  • 2 eggs
  • 1 teaspoon vanilla
  • ¼ teaspoon baking soda
  • pinch of salt
  1. Preheat oven to 375 degrees. Let butter come to room temperature.
  2. With an electric mixer combine butter, brown sugar, coffee and vanilla.
  3. Add eggs and continue mixing until fully combined.
  4. Sift together the flour, cocoa, baking soda and salt.
  5. Slowly add to butter mixture until blended.
  6. Add chocolate chips.
  7. Drop by tablespoons onto an ungreased baking sheet.
  8. Cook for 7 to 9 minutes but be careful not to over bake- the cookies will come out soft.
  9. Allow the cookies to cool 2-3 minutes on the baking sheet and transfer to cooling rack until completely cool.
