spiced pumpkin bundt cake #bundtbakers
Keep it Simple, Sweetie:
  • 1 box of spiced cake mix
  • 1 package butterscotch pudding mix
  • 4 eggs
  • 1 cup vegetable oil
  • 1 cup milk
  • 1 cup pumpkin puree
  • ½ stick of butter
  • 1 ounce spiced rum (optional)
  • 1 ounce cream
  • ½ cup brown sugar
  1. Pre heat oven to 350 degrees. Combine the cake mix and pudding mix.
  2. Add the pumpkin and all wet ingredients. Mix until combined and there are no lumps.
  3. Pour batter into a greased bundt pan.
  4. Bake for 1 hour or until a toothpick stuck in the middle of the cake comes out clean.
  5. While the cake bakes and cools, make the caramel glaze.
  6. Add the butter, rum and sugar to a pan over medium heat and stir until butter is melted and sugar is dissolved. This will also cook the alcohol out of the rum.
  7. Bring to a boil and let bubble for about a minute- keep stirring.
  8. Remove the glaze from the heat and stir in cream. Let the caramel cool, stirring occasionally.
  9. Once the cake has cooled completely, remove from the bundt pan and place on serving plate.
  10. Drizzle with the caramel glaze.
  11. Serve and enjoy! :)
