No-Boil Baked Stuffed Mancotti
Keep it Simple, Sweetie:
  • 1 container ricotta cheese
  • 1 package manicotti noodles
  • 2 eggs
  • 2 cups mozzarella cheese
  • 1 tablespoon pesto
  • 1 batch easy meat and veggie pasta sauce
  1. Pre heat the oven to 350 degrees. Combine the eggs, ricotta cheese, pesto, a pinch of salt and 1 cup of the mozzarella cheese.
  2. Transfer the cheese mixture to a gallon zip lock bag. It's easiest to only use half of the mixture at first and refill the bag as you empty it.
  3. Cover the bottom of a baking dish with half of the meat sauce and snip the corner of the zip lock bag with scissors.
  4. Squeeze cheese filling into each of the un-cooked manicotti and layer on top of the sauce.
  5. Top the stuffed manicotti with remaining sauce and a layer of mozzarella cheese.
  6. Cover and bake for 45 minutes, removing the cover for the last 15 minutes of cooking.
  7. Let the dish set (covered) for about 15 minutes and serve!
