Southern Pecan Pie with Bacon
Keep it Simple, Sweetie:
  • 1 pie unbaked pie crust (store bought or homemade)
  • 2 slices bacon, diced
  • ⅓ cup melted butter
  • 3 eggs
  • ⅔ cup sugar
  • 1 cup dark corn syrup
  • 1 cup pecan halves
  1. Preheat oven to 350 degrees.
  2. Cook bacon until crispy, drain fat and set aside.
  3. Beat eggs with sugar, a dash of salt, corn syrup, and melted butter.
  4. Stir in pecan pieces and cooked bacon.
  5. Pour mixture into the unbaked pie crust and bake for 50 minutes, or until a knife inserted in the center of the filling comes out clean.
  6. Be sure to cover the exposed pie crust with foil until the last 10 minutes of cooking so it doesn't burn.
  7. Let cool slightly and serve with vanilla ice cream.
