Pepper Jack Bacon Mac and Cheese
Keep it Simple, Sweetie:
  • 1 cup uncooked pasta (the shape is your choice, I like shells but macaroni is fine)
  • 5 slices bacon, diced
  • 1 tablespoon butter
  • 1 cup milk
  • 2 cups grated pepper jack cheese
  • 1 tablespoon flour
  • ⅔ cup panko bread crumbs
  1. Preheat your oven to 350 degrees and cook pasta according to directions (remember to salt the water).
  2. While the pasta is cooking, cook the bacon pieces until crispy.
  3. Once cooked, remove bacon and 2 tablespoons of the fat (separately) for use later. Leave the remaining fat in the pan and add flour. Cook over low heat for about 5 minutes, stirring occasionally.
  4. Slowly add the milk (stirring constantly) and continue cooking until smooth and thickened. This will take 5-10 minutes.
  5. Add cheese to the white sauce and stir until melted.
  6. Combine cheese sauce, cooked shells and half of the bacon pieces in a buttered casserole dish.
  7. Meanwhile, add the 2 tablespoons of bacon fat to a pan along with panko bread crumbs and toast lightly.
  8. Top mac and cheese with bread crumbs and remaining bacon pieces and bake for about 20 minutes.
  9. When your mac and cheese is bubbly and golden brown you are ready to serve!
