Bacon Apple Coffee Cake
  • ½ cup chocolate chips
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoons vanilla
  • 3 Macintosh apples, peeled and diced into ½ inch pieces
  • 2 cups flour
  • 2 slices bacon, diced
  • ¾ cup of oil
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking soda
  • pinch of salt
  1. Preheat your oven to 325 degrees.
  2. Cook the bacon until crispy and toss the apple pieces into the pan for the last 30 seconds of cooking. You don't want to cook the apples, just get them coated in the bacon fat and slightly warm.
  3. Drain the excess fat and set bacon and apples aside to cool.
  4. Whisk the oil, eggs, vanilla and sugar.
  5. Sift the flour, salt, baking soda and cinnamon together. Slowly add the dry mixture to the wet mixture until combined.
  6. Add the cooled bacon pieces, apples and chocolate chips to the batter and stir.
  7. Transfer batter to a greased loaf pan and bake for 1 hour or until a toothpick inserted into the center of the loaf comes out clean.
  8. I like to serve the coffee cake warm with a drizzle of maple syrup on top next to a delicious cup of coffee!
