Here’s what you’re gonna need:
1 pound ground chicken (or beef, if you prefer)
1/2 cup crushed tortilla chips
1 can diced green chiles (drained)
1/4 cup chopped cilantro
2 cloves of garlic (chopped)
2 sliced green onions (green and white)
1 tablespoon lime juice
pinch of salt
I don’t know about you, but when I cook Mexican food I love a good margarita. So I sipped on a yummy spicy marg (look for the recipe next week) while I cooked these meatballs. Perfection.
Here’s what you’re gonna do:
Mix all ingredients until just combined (don’t over work it, you’ll regret it).
Roll mixture into spoonful sized balls (makes approximately 20). This task is less annoying with the margarita…
Heat a sauté pan over high heat and sear the meatballs on all sides. Continue cooking the meatballs over medium heat until cooked through, about 10-15 minutes (or maybe longer, depending on the size).
To serve, mix cooked rice, a handful of chopped cilantro, a chopped green onion and your favorite salsa in a bowl and top with meatballs.
I normally top that with a little more salsa, cause…well, I like salsa. 😉
