I love this time of year. It’s that time when friends and family stop by just to catch up and you have a different party to attend (or host) every Friday and Saturday night.
Which is why we all secretly kinda hate this time of year too. You have to make sure the house is always spotless and there’s always something delicious in the fridge for snacking.
I can’t help you with the clean house (still working on that one myself) but I do have a solution for a quick and easy appetizer to serve in a pinch (or whip up for a party). Most of these ingredients can be kept in the pantry or fridge for as long as you need them and if you happen to not have something its a very easy recipe to adjust based on what’s in the house. You can make this in about 5 minutes with very little effort and simply serve with delicious chips or crackers!
Food Should Taste Good sent me some awesome chips to try and I gotta tell you….these Jalapeno chips are INSANLY good with this dip! They have just enough of a kick without overpowering whatever you serve them with. I also tried the olive, multigrain and chocolate (yes, chocolate) and enjoyed each and every bite.
But those Jalapeno. So good.
Keep a few bags of those in your pantry and you’ll be set for the social season…or the weekend. 😉
Here’s what you’re gonna need:
1 can refried beans
3 tablespoons taco seasoning (homemade is best…and easiest)
1 cup salsa
1 1/2 cups cheese
8 oz container sour cream
1/4 cup chopped cilantro (optional, but delicious)
1/4 cup chopped green onions (optional, but delicious)
Here’s what you’re gonna do:
Spread the refried beans evenly on the bottom of your serving dish.
Mash the avocados with lime juice from the lime and a pinch of salt. Once combined, spread over the beans.
Mix the sour cream and taco seasoning and add on top of the avocados.
Sprinkle cheese on the sour cream.
Spread salsa evenly on top of cheese.
Add cilantro and green onions on top.
Serve immediately with delicious chips or cover and refrigerate until ready to enjoy!
As I said earlier, Food Should Taste Good Jalapeno chips are my favorite with this dip, but any variety of chip will do for serving…if you aren’t the perfectionist type. 😉
