Today I want to share with you the most deliciously moist chocolate coconut crinkle cookies (try saying that three times fast)!
Now, don’t get nervous if you aren’t a diehard coconut fan- these cookies don’t taste like a tropical vacation, but they do have a very subtle hint of nuttiness and are unbelievably moist from that coconut! You’ll love em, I promise!
I created these cookies as part of the OXOGoodCookies, Cookies for Kids Cancer Program and it is such an honor to partner with OXO for this amazing cause! They were kind enough to send me some amazing tools to test out and I gotta tell ya, these did not disappoint!

And now…lets make some crinkle cookies!
Here’s what you’re gonna need:
3 egg whites
1 cup semi-sweet chocolate chips
1/2 cup coconut flakes
2 cups powdered sugar
1/2 cup cocoa powder
1 tablespoon cornstarch
pinch of salt
Here’s what you’re gonna do:
Pre heat oven to 350 degrees. Melt the chocolate chips over a double boiler (or slowly in the microwave) until smooth, set aside to cool.
While chocolate is cooling, sift together the cornstarch, salt, 1 cup of the powdered sugar and cocoa powder.
In a separate bowl, beat egg whites until fluffy.
Once egg whites start to form soft peaks, begin slowly adding the sugar and cocoa mixture until fully incorporated.
Next, slowly add the room temperature melted chocolate and coconut flakes until it creates a stiff dough.
Now for the fun part!
Place the remaining powdered sugar on a plate and using your OXO Medium Cookie Scoop measure about a tablespoon of dough, form into a loose ball and roll in the powdered sugar until coated.
Place on a greased cookie sheet about 2 inches apart (I highly recommend the OXO Non-Stick Half Sheet Pan– it cooks super evenly and never burns my bottoms…tee hee).
Bake until cookies are puffy and crinkled, about 10 minutes.
Let cool and enjoy!
