Today I’m going to share some super-dee-duper delicious cookies with you that not only taste like a mouth vacation but as an added bonus have absolutely NO BUTTER!
That’s right, ladies and gents, no butter. Now, that doesn’t mean these cookies are totally guilt free, they’re still chock full of sugar and flour and loads of other deliciously hip hugging things….but hey, every little bit helps so I’ll take the no butter. 🙂
I created these cookies as part of the OXOGoodCookies, Cookies for Kids Cancer Program and it is such an honor to partner with OXO for this amazing cause! They even sent me some of their fabulous kitchen tools as part of the program… because as we all know that when it comes to making cookies, having the right tools is essential!
One of my favorite things about these tools is that for each one sold, OXO will donate 25 cents in support of pediatric cancer research as part of its $100,000 pledge to Cookies for Kids’ Cancer. Look for the specially marked OXO products (they will have this green sticker) at participating retailers this month!

Who knew doing good could taste so sweet?! 🙂
Here’s what you’re gonna need:
2 3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
zest of 2 limes
juice of 1 lime
1 teaspoon baking soda
1 cup coconut oil
1 1/2 cups brown sugar
3/4 cups coconut
Here’s what you’re gonna do:
Preheat oven to 350 degrees. Cream together the brown sugar and coconut oil.
Add the egg, lime zest, lime juice and vanilla and beat with an electric mixer until combined.
Mix in the baking soda, baking powder, salt and flour, adding a little at a time, waiting until each batch is fully combined before adding the next one. Stir in coconut.
Roll cookies and place on a greased cookie sheet, or a silicon mat.
Bake for 8-10 minutes, until golden around the edges.
Let cool and enjoy!
